Kale:
Kale is one of those vegetables that are not only nutritious but also brings with it an attractive stately appearance. We have been eating Kale from more than 2000 years, and it is another one of those so-called superfoods. Unlike most vegetables, it will tolerate as little as 4 hours of sun per day. It can also be sown directly into your beds 4 to 6 weeks before the last frosts. This plant takes eight or nine weeks to reach maturity. If you want to eat it raw in salads, then you can snap off a few of the younger leaves earlier than that.
